Some Ideas to Get You Started!

I generally dislike offering our clients a "list of menu options" or items to choose from, as I feel that they box you in and limit your options or creativity. However, some clients find it easier to choose from a list of options or to at least have somewhere to start gathering ideas and finding inspiration. Please understand that this is never intended to be a "complete" list of all of our offerings. If you don't see something you'd like, please contact us to discuss your options! We are quite versatile and happy to accommodate most menu ideas! (we can even take your Grandma or Mother's recipe that you love, and scale it up to make it for your wedding or special event!)

SALADS:

SALAD BAR  Can’t decide? Try our DIY Salad Bar options! We’ll supply crisp Romaine Lettuce, Iceberg Lettuce, and/or a Spring Mix along with a variety of toppings and dressings that can be customized to exactly your tastes or desires.

CAESAR SALAD  Definitely our most popular option…our Caesar salad is dressed with a creamy, traditional Caesar dressing, and a generous mix of bacon bits and fresh grated Parmesan cheese. We can also include buttery toasted croutons, if requested as well.

GREEK SALAD  Also a popular choice, our Greek salad is a blend of rainbow cherry tomatoes, cucumber, purple/red onion, Kalamata olives, and Feta cheese in a traditional Feta dressing.

SPINACH AND STRAWBERRY  Tender baby spinach tossed with candied roasted walnuts, fresh sliced strawberries, and a bright fresh strawberry vinaigrette dressing. Perfect for any summer gathering!

CHEF'S SALAD  Ham, cherry tomatoes, cucumber, cheese, bacon bits, and hard-boiled eggs tossed with fresh Iceberg or Green Leaf Lettuce and served with Ranch or a variety of dressing options for your guests.  

POTATO SALAD  Our potato salad is modeled after Lesley’s grandmother’s recipe, which includes tender yellow-fleshed potatoes, Dijon mustard, yellow mustard, dill, smoked paprika, mayonnaise, sweet relish, bacon bits, onion, celery, finely diced peppers, and coarsely chopped hard-boiled eggs.

COLESLAW  A traditional mix of shredded purple and green cabbage, grated carrots, and onion with a tarragon-infused tangy and slightly sweet cider vinegar dressing. A delicious, crowd-pleasing coleslaw!

PASTA SALAD  Firm Fusilli/Spiral pasta noodles, tossed in a tangy dressing with bits of bacon, cheese, onion, celery, cherry tomatoes, and cucumber. A light, fresh pasta salad packed with full flavor!

(* We can also substitute gluten-free pasta instead, if requested!)

 

 

PROTEINS/ENTREES:

WHOLE HOG PIG ROAST  Our most popular option for weddings and large corporate events, a whole hog pig roast is a great way to feed a crowd with that “wow factor”! Our whole hog pig roasts are smoked offsite for 12-24 hours (depending on the size of the hog) over Applewood or a mix of Hickory, Oak and Cherrywood. We do not inject, rub, or baste our hogs at all, as the flavor of the smoke shines through brilliantly and offers all the flavor you need! Carved tableside, your guests are encouraged to take photos, ask questions, or request certain parts of the hog! We include our signature Kansas-city style BBQ sauce on the side, as well.

CHICKEN OR TURKEY  Slow-roasted and lightly seasoned, quality local poultry products from the South Peace Colony make an excellent choice for your event.

PULLED PORK  Slow-smoked over Applewood for approximately 12 hours, rubbed with our Memphis dry rub and pulled while still warm…our Pulled Pork has the perfect amount of smoky delicious flavor that enhances the meat without overwhelming it.

APPLEWOOD SMOKED PORK RIBS  Slow-smoked over Applewood for approximately 5-6 hours, rubbed with our Memphis dry rub and the addition of local honey makes these ribs sweet, smoky, tangy, and absolutely perfect. No sauce needed! (though we do supply sauce on the side for those who prefer their ribs a bit saucy, as well!)

ROAST BEEF  Oven-roasted low n’ slow, allows us to turn economical cuts of roast beef into a tasty dish rivaling your best Grandma’s roast beef! Best paired with our Garlic Mashed Potatoes and Gravy, this one is sure to be a crowd pleaser.

SMOKED BEEF BRISKET  Dry-rubbed with our signature spice blend and smoked low n’ slow for approximately 12 hours renders our smoked Brisket tender and moist. Perfect alone or piled on a toasted Brioche bun.

PRIME RIB ROAST  Perfectly marbled local Prime Rib roast has all the flavor you’re looking for! Slow-cooked until perfection, and served so that guests may choose the more “well-done” outside pieces or the “rarer” inside pieces. Prime Rib is a great choice if you’re looking to impress!

FISH  We can offer a variety of fish choices, with the most popular of course, being our Smoked Salmon or Honey-Chipotle Salmon, which has a “little bit of heat and a little bit of sweet”!

 

 

SIDE DISHES:

AGED CHEDDAR MACARONI & CHEESE By far, one of our most popular options! Our Mac & Cheese starts with a traditional roux of butter and flour, with heavy cream and aged cheddar cheese. Rich, delicious, and ooey-gooey goodness! This dish CAN be made gluten-free as well!

GARLIC MASHED POTATOES Another crowd-pleaser is our creamy, smooth Garlic Mashed Potatoes made with copious amounts of heavy cream and butter. Velvety smooth, rich, and absolutely incredible topped with gravy!

MOLASSES BAKED BEANS  A 5-bean variety mixed with onion, mustard, tomato, and molasses with apple juice, apple cider vinegar, and spices…then slow-cooked for hours until tender. A perfect balance of acidity and sweetness.

SCALLOPED POTATOES  Try our Scalloped Potatoes with a creamy garlic sauce, or have them “Au Gratin” and baked with layers of delectable aged cheddar cheese until bubbly and golden.

CORN ON THE COB Served with a “dunk tank” of salted butter! To really amp up the flavor, ask us about seasoning options that may be sprinkled on your corn!

ROASTED OR STEAMED SEASONAL VEGETABLES  Seasonal vegetables, steamed or roasted and seasoned/dressed simply with salt and pepper or an herbed butter. Our Honey-Butter Chive Carrots are a delicious option for a sweet side, as well! 

ROASTED ROSEMARY BABY POTATOES  Baby potatoes tossed in a Rosemary-infused butter and roasted until slightly crisp.

SMOKED-BACON BRUSSELS SPROUTS Roasted Brussels Sprouts, tossed with our double-smoked thick cut bacon.

ROASTED OR STEAMED SEASONAL VEGETABLES  Seasonal vegetables, steamed or roasted and seasoned/dressed simply with salt and pepper or an herbed butter. Our Honey-Butter Chive Carrots are a delicious option for a sweet side, as well! 

 

 

DESSERTS:

GOURMET CUPCAKES With over 75+ flavors to choose from, we're sure to have a cupcake to suit any tastes or occasion! We can even include edible-image logos to tie your cupcake design into your event or brand them for your company.

GHIARDELLI DARK CHOCOLATE MOUSSE Rich, delicious dark chocolate mousse topped with Vanilla Bean whipped cream and fresh berries. Or try your mousse topped with Bailey’s infused whipped cream and caramel or chocolate ganache drizzle!

BROWNIES & BLONDIES We can also offer a variety of Brownies or Blondies, such as Peanut Butter Brownies, Dark Chocolate Brownies, Mint Chocolate Brownies, Caramel Blondies, Birthday Cake Blondies, Peanut Butter Blondies, Lemon Blondies, etc.

COOKIES Old-School Chocolate Chip, Birthday Cake Chocolate Chip, Sugar Cookies, Peanut Butter, etc. Whatever your tastes, we’ve got a cookie for you!

FRESH FRUIT PLATTER For a healthy, lighter dessert option…try a fresh fruit platter served with Greek yogurt dip! 

CHEESECAKE New-York style Cheesecake on a honey graham cracker crust, served with a variety of fresh fruit or berry compote topping, caramel, or chocolate ganache.

SHEET CAKE As with cupcakes, the variety of cake options is endless. Or choose a traditional cake option such as Strawberry Shortcake or Harvest Carrot Cake. Contact us to discuss your cake needs!

COBBLERS & CRUMBLES We can also offer a variety of different fruit or berry crumbles and cobblers. Best served with a dollop of Vanilla Bean whipped cream or Vanilla Bean ice cream!

MINI TARTLETS OR PIE Love Lemon Meringue Pie? Try our miniature Lemon Meringue Pie/Tartelettes with a dollop of toasted meringue! Perfect for the lemon lovers. Or try a different variety of our mini fruit pies! (Peach, Cherry, Blueberry, Haskap, Apple, Raspberry, etc.)

MUFFINS Fresh-baked muffins in a variety of flavors including Chocolate Chip, Apple-Cinnamon, Blueberry, Lemon Poppyseed, Chocolate-Chocolate Chip, and so many more…

 

APPETIZERS/MIDNIGHT LUNCH:

FRUIT & VEGETABLE TRAYS  Everybody loves fruit and vegetables with dip! We serve up our variety of bite-sized fruits and veggies with either ranch dressing or a Berry-infused Greek Yogurt dip.

MEAT & CHEESE TRAYS  We can offer a variety of soft and hard cheeses, cured or smoked meats, along with a selection of crackers, bread, or buns. Great for your Midnight Lunch offerings, as well!

CRUDITE  A fancy way of saying “Individual cups or shot glasses filled with dip and a selection of veggie sticks”. Perfect for enjoying while mingling with guests during a cocktail hour, and always a safe choice as an appetizer that everyone will love.

SMOKED SALMON WITH DILL CREAM CHEESE ON CROSTINI  Soft rounds of fresh-sliced crostini, topped with a Smoked Salmon and Dill cream cheese mixture.

CRAB STUFFED MUSHROOM CAPS  A delicious concoction of buttery crab, baby shrimp, herbed cream cheese, and aged cheddar cheese served hot and bubbly in a mushroom cap.

BUTTERFLIED GRILLED GARLIC SHRIMP  Beautiful fresh shrimp, simply butterflied and brushed with a garlic and herbed butter and grilled to perfection.

DEVILED EGGS  The sky is the limit! Stick with the traditional Deviled Egg served with a sprinkling of green onions and smoked Paprika, or try a unique take on the classic with our Smoked Chipotle Deviled Eggs or Green Tea Deviled Eggs!

SOFT PRETZEL BITES  Soft pretzel bites, dusted with coarse sea salt and served up with mustard, our delicious Aged Cheddar Cheese sauce or for a spicy kick….try our Chipotle Cheddar sauce!  

 

 

MIDNIGHT LUNCH  Choose any of our Appetizer options and have us set them out for your “Midnight Lunch”, later in the evening!  

 

NOTE - Many guests would love to use any "leftovers" from dinner, as their "Midnight Lunch" meal. Due to liability issues and guidelines from Northern Health, any food that has been served for dinner CANNOT be saved and re-served to guests later. We are happy to set-aside trays in your venue's kitchen or in our refrigerators on the truck specifically for your "Midnight Lunch" of food that has not been hot-held or served at dinner though, if you would like the same menu for later. Please ask us about these options or discuss any desires for a "Midnight Lunch" meal that you may have. We do not automatically include a "Midnight Lunch".
